To start you want to learn one design of each color blue gems. This way you can buy the gem and sell the crafted gem on the auction house. However, as you progress through the game and master your Jewelcrafting profession, you can push yourself further and try to learn all of the Jewelcrafting designs. If you learn all of the designs listed above, you can choose what to craft or cut and sell that gem on the auction house for the biggest profit.
If you have all four gems, you can cut all four gems and put them all on the auction house even if one or two might give you a lower profit margin in comparison to another gem. At the end of the day, as long as you are coming out on top with a profit, you should do your best to maximize your opportunities to make gold and you can do this by selling multiple gems at the same time.
